Grilled Pork Fajitas
A traditional Mexican recipe, perfect for summer grilling.
Ingredients
- 1 lb. pork tenderloin, thinly sliced
- 2 Tbs olive oil or vegetable oil
- 1 medium onion, sliced
- 1 small red pepper, sliced
- 4 flour tortillas, warmed
- 3 oz. Queso Fresco, crumbled
- 1 cup Achiote Recado (recipe available on tedsbutcherblock.com)
- fresh salsa
Instructions
1. Mix pork and Achiote Recado in a bowl. Marinate for 1-2 hours in refrigerator. Bring to room temperature.
2. Heat oil in non-stick skillet over medium high heat. Add pork and cook 3-5 minutes. Remove from the pan.
3. Add onion and bell pepper to the pan and cook 3-5 minutes until softened. Add pork and heat through.
4. To assemble, place fajita mixture on warm tortilla and crumble queso fresco on top. Top with fresh salsa.
